Cooking & Preserving #12: Surprisingly good soup

A ”this and that” soup from scratch

You know that PEAR CRUMBLE that I made today?

Well, rather than scrubbing out all the residue of the sweet batter in the pot, I just used it “as is” for my homemade soup.

I thought it would be horrible but, surprisingly, no!!

Ingredients

  • Water (I filled the pot about 3/4 full)
  • I cut up and added 4 small potatoes
  • I cut up and added 1 parsnip
After letting that cook for a while (until the veggies were soft), I added:
  • 1 jar of freeze-dried broth
  • 1 jar of freeze-dried leftovers (1/3 jar was puréed tomatoes; 1/3 jar was turkey soup; 1/3 jar was biscuits;)
I let everything slowly cook until everything was reconstituted.

The freeze-dried biscuits made the soup more of a stew texture but, because I had started with lots of water, I’d still call it soup.

With lunch being soup and pear crumble, our stomachs were very happy.
