Winter Hoophouse Garden

I had envisioned harvesting some crops in the winter, thanks to my wonderful hoop house but I think my gardening energy is dwindling and we haven’t even gotten to the snow stage yet.

But ... I’m still curiously. How and what could I grow, if I wanted to.
