- 1/4 c walnuts
- 6 garlic scapes
- 3 cups (?) of greens (kale, Swiss chard, spinach, parsley)
- 1/4 c olive oil
- 2 c mozzarella cheese
- 1 freezedried lemon, crumbled
- 1 tsp salt
- 1 tbsp lime juice
I put it all into a food processor, one item at a time, and ground it all up into pesto.
It is VERY garlicky. Should probably add some more cheese and oil but, for now, it is a great dip for crackers and I love garlic so I’m happy … Rick? Probably not so much.
