Roasting a chicken? Might as well make some chicken stock.. it’s basically free.
Keeping it simple
I’m not a cook. Heck, I don’t even call myself a homemaker. So, when I cook something, it’s going to be pretty uncomplicated.
How I make stock
Roast a chicken or a roast, adding a cup or two of water in the bottom of the pan
Take the meat off the bones and put the bones into the Instant Pot
Add the liquid from the bottom of the roasting pan
Add enough water to cover the bones.
Pressure cook for 3 hours
Canning the Stock
I, then, let the stock cool so that the fats solidify on the top.
I remove AND SAVE the fats for cooking
Put the stock in canning jars
Pressure can
(For me, it is 20 minutes for pints and 25 minutes for quarts at 10 pounds of pressure
Freeze-drying option
I also love to freeze-dry my stock. I pour the stock into trays and freeze them. Then, I freeze-dry it. Once done, I store it, crumbled, in pint jars, vacuum sealing the jars. This takes up a lot less space than canning the liquid.
