Protein Pancakes with Sourdough Discard
What to do with the leftover flour that I ground yesterday?
What about pancakes.. let’s experiment!

I woke up this morning thinking about using the last of my ground flour that I made yesterday as well as my sourdough starter discard. .. and what if I added protein powder? And …?

With my bread experiment being a success yesterday, I decided to try an experiment again today.

The Pancakes

I ended up mixing together:
  • 2 cups sourdough starter discard
  • 2 scoops protein powder
          (Salted Caramel - yummy))
  • 1/2 c whole wheat flour
  • 1/2 tsp baking powder
  • 1 egg

Cooked them as you would any pancakes (wait for bubbles; flip and cook for another minute or so) on my Kuraidori set at 390F.

These were so good and, because of the Salted Caramel flavour of the protein powder, I didn’t even need to do my usual slathering of maple syrup. That’s really what you eat pancakes for, right?? Pancakes are a carrier of maple syrup. But not this time!

So good and so good for you.
This experiment was definitely a win.
